Why use Mid/Sides processing for stereo output?

Mid/Sides processing separates the center of the stereo image from the side information. That can preserve width while denoising, dereverbing, or restoring stereo material.

Use Mid/Sides when the source has important stereo ambience, room sound, or wide instruments. Use mono only when you intentionally want a simpler centered output or faster processing.
